However commercial cooking equipment is heavy! These are designed to be placed on concrete floors. The floorboards of some box trucks are inadequate and insufficiently braced. Often the frame is two parallel C-channels with few diagonal and cross braces.

Cummins 10kW diesel generators are very heavy and it is mounted by Mile High Custom food trucks towards the back of the vehicle several foot behind the axles. The generator needs to be here due to NVH(Noise vibration and harmonics concerns), so we built a structure under it with box sections and tied it to the frame.

Notice how all the structural supports for the body are towards the center of the frame and there isn’t any support where the corners of the box would be.

Now picture where we place cooking equipment in a food truck.

Towards the sides/corners of the box! In an 18ft long truck or trailer the load that’s essentially hanging off the frame towards either side is about 1500-2500lbs.

This is compounded if you have equipment that’s more dynamic in nature like mixers etc. These have the effect of pounding on the (already overstressed) frame. We see this most in older dodge vans for some reason.

Our theory is that the pocket like features in older dodge vans collect grit and water, corroding them, making them more suspect to frame failures than others.
